SteamingSteaming is a great way to prepare vegetables without using a lot of fat. You can steam veggies with or without a steaming basket. With a steaming basket, you put it in a pot with about an inch of boiling water below it. You then add the veggies to the basket, add the cover, and cook. You can also steam veggies without a steaming basket by either using a heat resistant strainer or by steaming them in a small pan filled with half an inch of water. Some vegetables that are good steamed are artichokes, beets, bok choy, broccoli, brussel sprouts, carrots, and cauliflower.

BoilingA benefit of boiling vegetables is that by doing so it may increase the antioxidants in the vegetables. You can boil vegetables by chopping them up into equal sized pieces, dropping them in boiling salted water, boiling them until tender, and straining. Some vegetables commonly enjoyed boiled are butternut squash, collards, corn, parsnips, potatoes, rutabagas, and sweet potatoes.

Pureeing in SoupsSome people puree their vegetables in soups because it may help digestion. You can puree a vegetable in a soup by cooking it in the soup or cooking it until tender in some other way. You then stick in in a blender or food processor with some/the rest of the soup and puree it. Some vegetables commonly enjoyed pureed in soups are acorn squash, asparagus, butternut squash, cauliflower, parsnips, rutabagas, sweet potatoes, tomatoes, and turnips.
